The other day I was kneading my pizza dough in my stand mixer. And I forgot to time it. 750 gms of dough @ 64% hydration. kneaded almost for 30 minutes at speed 2.5!!help please. Is this over kneaded dough? It’s looking pretty smooth though. Does not break easily as yet.
